Raw Organic Agave Nectar

Agave nectar is a sweetener extracted from agave, a cactus-like plant from in Mexico. Agave Nectar can be extracted from several species of agave, including Agave tequilana, the Salmiana, and Rainbow varieties. Agave nectar is sweeter than honey, but less viscous.

To produce agave nectar, juice is expressed from the core of the agave, called the piña. The juice is filtered and then to hydrolyze carbohydrates into sugars. The main carbohydrate is a complex form of fructose called inulin or fructosan. The filtered, hydrolyzed juice is concentrated to a nectar-like liquid a little thinner than honey. Agave syrup consists primarily of fructose and glucose. Agave nectar is notable in that its glycemic index and glycemic load are apparently lower than most other natural sweeteners, due to its high fructose content. Therefore it is a very good choice for the people who are sensitive to sugar.
